meet the team: sean currie
Let’s meet the iasg team. First up is our Head Chef, Sean Currie.
Sean actually worked in our kitchens around eight years ago before flying the nest. Now, it’s not far off a year since he returned to head-up iasg.
tell us a bit about where you’re from.
I was brought up in a small mining village in Ayrshire called Auchinleck, not far from the west coast of Scotland. This is also where I got my first chef job and started my career before coming to Glasgow to explore bigger things.
what’s your favourite thing about your job?
As Head Chef I’m responsible for staff training and general management of the iasg kitchen. But the best part of my job is being able to be creative with the menus. I love working with fresh Scottish produce and local sustainable seafood – and that’s what it’s all about at iasg. So, I would say a perfect match!
tell us about the proudest moment of your career.
The proudest moment of my career was getting a Michelin Plate at my previous restaurant. It was a great feeling of gratification for the hard work and passion that we all put in every day. I’m hoping to experience a similar moment again in the future. Watch this space!
what do you love about the hospitality industry?
There are quite a few things, but if I had to pick just one, I would say the people. I love the camaraderie that goes along with working in such a hectic and sometimes stressful environment. Working in tandem with Stuart Thomson, Kimpton Blythswood Square’s Executive Head Chef, is a pleasure – he’s so approachable and supportive. He isn’t afraid of being hands-on and helping out, which is the leadership and teamwork ethic I aspire to, as well as cultivating within my team.
what’s your go-to dish when eating out?
I enjoy trying new things so there isn’t really a specific dish I go for. If something interesting pops out from the menu that I haven’t had before and it goes well with a glass of red wine, that’s all that matters to me!
what’s the one thing people don’t know about you?
I love obstacle course racing. It is just like the Ninja Warrior (you know, from TV), but outdoors.
