our sustainability policy
Opening hot off the heels of COP26 in Glasgow, we wanted to make sure we were doing our bit for the environment, as well as creating some stunning new dishes.
So, we’ve put together our own sustainability policy. It’s just a starting point for us, and we’ll be looking to do more in 2022.
our commitments
~ Our shellfish is hand-dived or creel caught, and our fish is line caught – both are sourced in waters where there is a healthy supply.
~ We follow the Marine Conservation Society’s Good Fish Guide when creating our menu, as well as sourcing locally and seasonally.
~ We only use MSC Certified suppliers who have a traceable supply chain and are recognised for their sustainable practices, in fishing and the wider ocean eco-system.
~ Our aim is to constantly revisit and investigate ways to reduce waste and work with our suppliers to be at the forefront of sustainable practices.
